Chocolate cake...well almost!


I have been trying to avoid sugar recently.

And I’ve been doing pretty well.

I have discovered that sugar free granola is pretty good (as long as it comes with berries).

All you need for cookies is banana and oats (yes really!).

I can make an amazing ice cream from just bananas, almond butter and a bit of coco powder.

And really I can get by without stopping at the shop on the way home for a bar of chocolate!

There is just one problem.

I REALLY miss cake.

Or biscuits.

Or basically that sweet treat that gets me through the afternoon.

So I thought I would share with you today my favourite sugar free recipe for that sweet treat.

Although if you were physically here I may not actually share them with you ha ha!

This recipe is adapted from Deliciously Ella and is delish.

If I close my eyes it does actually taste a bit like cake.

So you simply have to try it and let me know what you think.

Chocolate & Almond Bites

200g Ground Almonds

400g Medjool Dates (pitted)

2 tablespoons Coco Powder

2 tablespoons Almond Butter

2 tablespoons Coconut Oil

2 tablespoons Chia Seeds

Desiccated Coconut to cover

Wiz all the ingredients – excluding the desiccated coconut – in the food processor with two tablespoons of water until all the ingredients are blended together and sticky.

Roll the mix into balls and roll them around in the desiccated coconut to cover them.

Place the balls into the freezer for an hour or so to set.

Remove from the freezer and keep in the fridge for a few days or keep in the freezer until needed.
